I think it's a typo/misspelling of "udder," is all...
There are a number of recipes in my copy of Apecius that deal with the, uh,
less commonly used parts of an animal, including this one.
--Maire, who got really confused on what the heck a "sow's matrix" was
supposed to be...if it was a uterus, why didn't they just *say* so???
