The peels are soaked in the honey which is later poured on the bunuelos.
Yes, that part is a innovation but Teresa de Castro Martínez, Teresa
states in _Alimentación en las crónicas castellanas bajomedieivales_, p.
248 that bunuelos (not citrus) could be Roman.
Then Stefan went on to suggest I look in his

for a Jewish dessert. It is a very interesting message it only mentions
almond based Spanish desserts and I already have two items calling for
almonds so the treasurer has cut off my almond supply! I finally wrote
for me speech that everyone claims bunuelos are theirs, the Muslims, the
Jews who call them bimuelos and the Christians and mention the Roman
possibility.
