[Sca-cooks] pizza dough/alton brown conundrum? (OT)

No idea... I knead most bread and pizza doughs ~300 strokes by hand or 
until the texture is right, whichever comes first.  I am a fairly 
efficient kneader and it probably takes me less than 10 minutes.
