Ackkkk!  My Eyes!!  You've about burned them out of my
sockets this morning!!  Velveeta?!?! 
Margarine?!?!?!?!  I'm going to have to do therapy...

I've been working on a period panacotta recipe from
Gallo's "On Making Cheese", 1575.  Quite nice with
junket but now I'm trying to get the right amount of
rennet worked out.
