It produces liquid, but not all that much.  You have to weight the 
cabbage down to keep it submerged in the brine.  I'm guessing you'd lose 
no more than 5-10% of the original weight to brine formation.

People in this neck of the woods are demons for sauerkraut at feasts, 
though.
