Salami cotto? The cooked stuff? Really? I'd have thought Genoa or  
sopressata, or cappicola... then again, you _can_ slice Virginia ham  
paper-thin and eat it raw, you know, and pretty darned good it is,  
too. I mean, if you're doing pickled peaches and all ;-)
