Ok, if it was time for a before dinner drink I would go to the kitchen 
right now and prepare a cheese platter and in the center I would put 
Torta de Casar if I had it with thin slices of French bread to dip into 
it which I don't have either but Yummy! Casar is not regional pride its 
just my favorite but the other cheeses I mentioned would go on the 
platter too if I had them, a big plate and lots of people with whom to 
share all that. I am sure for others their favorite cheese is one they 
add to cookery recipes. I think it is a matter of thinking if you go to 
the kitchen right now to fetch one cheese (dreaming you have everyone 
you have tasted and really liked), which would it be no matter you think 
you will do with it?
