Smith's mantra. I've never forgotten it.

My memoery of his mantra is:
Hot wok . . . .cold oil . . . food won't stick
I buy into Bear's description of the success of this adage. Oil becomes
much like creasote when slowy heated to high temps in a deep fryer. Makes
sense that small quantities can distill out and plasticize pretty quickly.
