There's a whole row, maybe three blocks long, with several restaurant
supply houses, on the Bowery starting just above Houston Street,
where you can get anything from a four-foot-diameter wok to an
Official Ray Bari pizza oven to a $4, thin, mild steel omelette pan
from Spain (still pretty much the Holy Grail of omelette pans: cheap,
practically indestructible, able to be seasoned, and a serious
simplicity of design typical of good professional tools).
"S'ils n'ont pas de pain, vous fait-on dire, qu'ils mangent de la
brioche!" / "If there's no bread, you have to say, let them eat cake!"
-- attributed to an unnamed noblewoman by Jean-Jacques Rousseau,
"Why don't they get new jobs if they're unhappy -- or go on Prozac?"
-- Susan Sheybani, assistant to Bush campaign spokesman Terry
