Schuesseln is the plural form.  I've notice that 
Rumpolt at times also  uses  "ein" or"eine" with 
what appears to be a plural noun. He plays pretty 
fast and loose with word endings though.

2. Kanstu etlich essen von der Spensaw machen / daß sie doch gantz bleibt.
You can make many dishes from the pig where it still remains whole.

Wenn du sie sauber gebrüt / und nicht verbrüt hast / daß die Haut gantz ist /
If you cleanly scald it/ and did not over scald/ so that the skin is whole. 

so zeuch sie von der Saw ab / daß du den Rüssel daran leßt /
Thus pull it (the skin) from the pig/ so that you 
leave the the snout on (the skin).

nimm aber dz Hirn auß dem Kopf /
Take but the brain out from the head/
