I sent that a little too soon.  Here is another use:
mach es mit lauterm Zucker win/ mix it with pure sugar "win"

  It could be same root as "gewinnen" which means "gain" or perhaps "develop".
daß es ein farb gewinnet/  that the color develops
so wirdt es ein grauwe Brühe gewinnen/ like this will it develop a grey broth
so gewinnet es ein liebliche Brühe/ like this it develops a lovely broth
und gewinnet keine Haut darauf/ and develops no skin on it
daß ein faum gewinnt/ that a foam develops

but develop or gain doesnt seem to make sense in those sentences.
