Great call on the ethnic markets. There are several "Fiesta" stores in the area as well as large Asian stores. I'll check there.
Phlip's idea about feed stores works, too. This being Texas, I can go to some of the areas outside of Dallas proper and find real ol' fashioned feed stores.
 
There's a place at the Dallas Farmer's Market that sells more exotic meats as well.
 
I'd love to budget even small venison chops over frummenty with powdre forte. But that's a dream right now.
