I'm confused. "Jam" as I know it is preserves of fruit cooked in a thick
syrup of their own juices-- examples in Rumpolt, Elixirs of Nostradamus,
etc.

Are you thinking of Jelly in terms of cooked down sweetened fruit juice
things such as quince paste? That's the closest to Jelly in period I can
think of right now...
