[Sca-cooks] Lemon Chess Pie

Sorry, I missed the recipe request.  However, here is the one from "Virginia
Hospitality", my absolute favorite modern cookbook...Phillip's mother gave
it to me one of our first Christmases together...I have never cooked
anything out of it that didn't turn out exceptionally well.  It's the only
cookbook that I trust enough to make something from it for a party without a
test cook first!

Anyhoo...here 'tis:

Lemon Chess Pie (courtest of The Carraige House, Norfolk, VA)

3 eggs, beaten until light
1 1/2 cups sugar
1 1/2 lemons, juiced
grated rind of 1 lemon
3 tablespoons butter, melted
1/2 tsp. salt
1 pastry shell, unbaked

Preheat oven to 350.  Combine first 6 ingredients and pour into the pastry
shell.  Bake for 25 - 30 minutes.

Simple, yes?  And to die for!!

If anyone wants, the cookbook was published by the Junior League of Hampton
Roads, Inc., Hampton, VA.  I know that, while my copy is about 20 some years
old, they have republished it several times.  It's that good!
