[Sca-cooks] Lemon Chess Pie

Since a recipe was requested, and no one replied, here's my Southern
family's recipe.

 


LEMON CHESS PIE


 


INGREDIENTS


*	4 eggs 
*	1 1/2 cups white sugar 
*	2 tablespoons white cornmeal 
*	1/4 cup butter, melted 
*	1/2 cup milk 
*	2 Tbs. fresh lemon juice
*	1 recipe pastry for a 9 inch single crust pie 


DIRECTIONS


1.	Combine eggs, sugar, cornmeal, melted butter, milk, and lemon juice
in a large bowl. Mix until sugar is dissolved, but do not beat. Pour filling
into unbaked pie shell. 
2.	Bake at 425 degrees F for 10 minutes. Reduce temperature to 350
degrees F and continue to bake until set. Serve at room temperature.
