Here's the recipe I use:

2-3 large lemons
2 cups sugar
1/4 tsp. salt
4 eggs
4 Tbsp. butter, melted
3 Tbsp. flour

Take the zest from the lemons and set aside. Cut the pith from the  
lemons and discard.  Slice the lemon pulp as thin as possible,  
removing the seeds, and place in glass mixing bowl. Add sugar and  
salt, and mix well. Cover and refrigerate for 24 hours, stirring  
occasionally. In a separate bowl, beat eggs well. Add butter and  
flour and whisk until frothy. Add to lemon mixture and pour into pie  
crust. Cover with top crust and bake at 425 degrees for 30 minutes.  
Reduce temperature to 350 degrees and bake for an additional 20  
minutes, or until a knife inserted in the center comes out clean. Let  
cool, serve at room temperature.
