[Sca-cooks] 5 Course feast was New Year's Eve/Day repast

Some years back, when Atlantia celebrated its 20th anniversary, we did
something similar.  As we were feeding 600 people, the decision was made to
invite each group to propose its best cook to participate by preparing their
"signature" dish.  There was a head cook who reviewed all of the proposed
dishes to make sure that we had a variety of dishes...and, in at least one
case, an individual who was known for a specific dish was asked to fix
that.  Despite the fact that we served the feast in a major rainstorm to
actually (we discovered later) was the precursor to a hurricane, the feast
"halls" were large open-sided pavilions and we literally had to wade out to
the tables to serve the feast, it was a success.  No one went away hungry,
and most, if not all, thoroughly enjoyed what we did.  To be honest, I can't
remember what we charged for the feast, but again, we got no complaints!
