And speaking of hard work, Gunthar's display was very impressive and 
delicious.  It was also well documented.  He received 49 of 50 points and 
was among the top 10 presenters.

He did tell me that the point that was taken off was because the manchet was 
too light.  I have a couple of quibbles about the manchet (about the 
textural qualities of the crumb), but too light isn't one of them.  His 
documentation clearly showed that the bread had been baked at 350 F (IIRC) 
for one hour.  This is in keeping with the recipe and produces a crust 
similar to that of German semmel, which is nearly white.

Although he is tired of preparing this particular display, I hope that some 
of you will have the chance to examine it at Gulf Wars.
