Yup, that was exactly it.  There are lots of times that I _don't_ do any 
test cooking, but I know when it needs doing :-)

I always mean to do that, but I'm woefully slack about it.  I did manage 
to have printouts of my menu and annotated original source for my 
Platina feast.
