You might start by querying him as to what flavors he really liked
before the surgery. What were his favorite foods then?
Did he like chocolate? peppermint? hot pepper sauce?
That might give you a basis to start with. Then you could work to 
develop that might hit the spot.
Also Nestle according to their website makes flavor packets for these 
supplements.
Can he have those added into his cans of Nutren?
