Cailte mentioned finding in a new store:
<<< however, dear heart drew my attention to the skinned pig
head nestled among the tripe and pigs' feet. made sense
here. i certainly wouldn't expect to see one at smith's
or albertson's. 8) >>>
Okay, does this mean a pig's head with the skin removed, leaving just
the meat? Or just the skin from a pig's head? Or the meat and skin,
both removed from the skull?
I'm not sure if this would be a help or not, but if you decide to
take advantage of this unusual offering, there is this file in the
FOOD-MEAT section of the Florilegium:
pig-heads-msg (18K) 4/14/07 Cooking, displaying or otherwise
working
with pig's heads. Real and
artificial.
