How about gingerbread? I make it with honey, warmed with plenty of
ginger, cinnamon and a some black pepper, then stir in breadcrumbs
(unseasoned) until it's stiff, and cool it so I can handle it. You can
shape it into balls, or press into a mold or tin and cut it into
squares. There's actual recipes out there in plenty of places - Gode
Cookery comes to mind, offhand.

I'd also say make a yule log cake, but frosted things take care in
transport. I don't know if you're up for baking, but candy cane shaped
cookies (like these:

although I haven't made them myself) or just about any Christmas-theme
cookie would work for me.
