I will say aside from ingredients that do not appeal to me or that or not
accessible to me with a reasonable substitute. The deal breaker for me is
can I do it with my existing equipment. If I don't have the equipment to
adequately attempt the dish, then I'll have to prioritize if & when I get
that equipment.
