The article on OFr. "Ailliee" in the 'Altfranzösisches Wörterbuch' of Tobler-Lommatzsch is online here:

They render the meaning with German "Knoblauchbrühe".

If I remember correctly, "Enseignements" is preserved in a

manuscript from around 1300. 1604 is the publishing date 

of "Ouverture de Cuisine".
