I skipped Greek it seems--

Do you mean Greek cookbooks published in modern Greece prior to 1600
or ones reflecting the Byzantine Empire?
If the former try *Siren Feasts: A History of Food and Gastronomy in 
Greece by Andrew Dalby.

*If the latter, you might want to start with *Flavours of Byzantium by 
Andrew Dalby
and read that volume.
