[Sca-cooks] What to do with this meat

Thank you for all the suggestions.  It sounds as though with this cut of
meat that slow cooking, prolonged marinating, or cutting it info very small
pieces are the way to go.

I plan to try out a bunch of the suggestions in small batches as so many of
your ideas sound deeeeeeeeeeelicious.
