Defining it can be rather funny--	


   1. any gelled suspension made for culinary purposes

One could leave it at that.

Image searches on gelee range from bath gels to gelatin
dishes in fancy glassware to layered desserts that resemble
Jell-O and Dream Whip to jars of Raphaël Gelée de Pomme  plus shoe inserts.
