[Sca-cooks] rich yeasted cake

For a rich yeasted cake, if you don't have a bread machine, would you do something like this?
1 - Proof yeast with warmed ale & 1T sugar.
2 - Mix ingredients except currants. Let rise until doubled. (inside oven w/pilot light is what I used to use for bread)
3 - Mix in currants, let rise until nearly doubled.
4 - Bake

And how many packets of yeast = 1T?
