thank you Mistress.  I appreciate the vote of confidence.  You are right -
most of the cooks do not have "back up" per-se but there are always offers
of assistance.

I am not doing this alone - I have a 2d and I've had offers of help from
many.  My kitchen is open for volunteers whether it's for an hour or
longer.  We always can find something for people to do!!!
