We have a subscription to Cook's Illustrated and I highly recommend it
to everyone. Each issue is like sitting at the knee of a cooking genius.
This is the same group that does "America's Test Kitchen" and they take
no advertising so they don't mind recommending products or rejecting items
depending on how they fare in their tests.
The subjects range from the best saute' pan to use to the best way to make
a chicken stock to pretty much every aspect of cookery. Their tests are
scientific and explained in clear English.
Really, every cook should have a subscription. Each issue I learn new things.
