}Dried seafood (especially dried prawns) are used an enormous amount
in Thai food for the outragous amounts of umami and texture they can
add to dishes...
 An example of this is Som Tam, the Thai green papaya salad... It's
just not the same without the subtle notes the dried prawns bring to
the dish...
