There are some interesting cucumber recipes in Food and Drink in Medieval Poland.?? Pears stewed with cucumber and figs is definitely a different taste.? We served it at the last Middle Kingdom Coronation.? There is another of ham stewed with cucumbers which I have not tried.?? Ealdred

I'm still working on my update, but Digby uses cucumber as a potherb twice,
English herbals and Apicius both list ways of pickling cucumbers with
various herbs, including dill, fennel and...uh...cloves?????
