Katira Sent "Grow your root crops to maturity, leave in the ground and if necessary, mulch well to protect from frosts."

Which might work for some places. It will not work for Wyoming. Our growing season is June to August. There may or may not be a week or two either side of that, but we got snowed on on the 10th of June last year, and again on the 3rd of September. Ground around here does not frost .. it freezes .. solid .. to a depth of more than 8 inches (often more) and stays that way. Any root veggie crops not harvested and brought indoors will be useless by All Hallows Eve in all but the rarest of years. Preservation happens by dehydration and storage or by canning (OOP) and storage.
