We made a similar gingerbread recipe for a children's activity at Steppes Artisan in 2009.
We did grind some of the crumbs by hand (using air-dryed bread that was a day old) so
some of the crumbs were a little thick (we supplemented with prepared bread crumbs
in the interest of time).  I heated the honey but had
the kids put in all the othe ingredients. 

 The kids did not want to wait very
long for it to cool so I poured it into non-period muffin cups.  That way
samples could be handed out as well.   The only caveat is that it is
very sweet and rich, so if I did it again I would use mini-muffin cups if there
was not time for it to cool, to make the portions smaller. This might work
well for a tasting display too.

I believe the receipe that we used came from
one of the Florilegium articles on period gingerbread that is
in one of the files concerning cooking with children.  It used
red food coloring and bay leaves for decoration, which
would be a nice Yuletide effect.
