I am reminded of the Terlingua, Texas Chili cookoffs in, I guess, the  
60's, which in part were set in motion by a comic piece by the  
humorist and journalist H. Allen Smith, originally, I believe, from  
Indiana, and later of Mount Kisco, NY, entitled, "Nobody Knows More  
About Chili Than I Do".

His recipe seemed pretty tame and Cincinnati-ish to me, as I recall,  
but I think what some people missed was the fact that he was joking.

Flay -- I'm not so sure.

On the other hand, _most_ of the New York chefs in my experience  
(including, to my sorrow, Flay, who was an exception) have great  
respect for the traditions of others. It's important to remember that  
a lot of people in New York aren't natives, and from a restaurant  
perspective it makes sense to cater to some of these homesick folks.
