[Sca-cooks] Almond Milk?

Thanks, Stefan, besides the cookbooks all my kitchen equipment is still in
storage as well, so the almonds were ground up from slivered almonds using a
large glass bowl & a small heavy sided ramekin.  The consistency was varied due
to my arm getting tired (it wasn't 4 c, but more like 7 c-I was also making
almond tarts) and my time short.  So I had fine flour with medium chunky bits &
all sizes in between.

The Florilegium totally slipped my mind when I was getting ready for the party
and I have it bookmarked on this computer!  Thanks for doing it, I will make use
of it for January's gathering.

I am not looking to form a formal guild, but rather just have an A&S project
that helps talk people into serving more period feast down here in this part of
Meridies.  If I can show the local members that not all period foods are strange
then maybe we can get more people willing to eat a period feast-not many of the
members have adventurous taste buds.  One guy said that the white pork, a
package of Ritz crackers & a six pack would be a good way of spending an evening
in front of the TV-so that's progress right?<;^]

Sometimes it isn't just the ratio of ground almonds to liquid, but also how
finely the almonds are ground, if they've been squeezed to get all the moisture
out, how many cycles of liquid the almonds have been through etc.

You might try this Florilegium file in the FOOD section for a bunch more details
and recipes on making almond milk.

There are a lot of recipes in the various Florilegium food sections, so until
you get your books out of storage, you might wish to look online there.

<<< On a related note I am going to start having a cooks day at my house once a
month to do period cooking with the Shire members. >>>

Perhaps this file in the SCA-INC section might be of use to you with the cooking
guild you wish to start.
