[Sca-cooks] Period recipes at Christmastime

As a professional Santa and Mrs. Claus, we are on the go a lot, and have
many days when stopping for a meal isn't possible. I made a large batch of
Hais this year, and it has been a great way to snack on something healthy
and substantial as we go through our busy season.
I know it isn't the same sort of "what food do you make for your family at
this special time of year" recipe that you were asking for, but it is a
period food that is serving us well!
I may make some Gingerbrede for a friend once the 24th is past, and the
Compost I made earlier this fall may well make an appearance on the
Christmas dinner table. I was flirting with the idea of trying a
gluten-free plum pudding, but have decided on a flourless almond and pecan
cake served with a muscadine port reduction. Not period at all, but it will
be yummy.

I was going to ask what everyone is cooking for Christmas, but I thought
that was kind of off topic. So I thought I'd ask what period dish you'd cook
for Christmas? Or what you'd cook for a period Christmas?
I can't go past Bourbelier de Sanglier from Le Menagier myself. Although if
it was a proper period Christmas I suppose you would want a boar's head or a
swan.
