*tick-tick-tick-DING*  Ah, yes. brain is back up and running, sort of.

Another source for images and other nformation on period chafing dishes
would be Peter Brears' _Cooking and Dining in Medieval England_.  Lots of
drawings of survivng artifacts and depictions from period sources, in the
chapter on cooking equipment.  It seems they were used for both keeping
prepared food warm and for small-scale cooking at table, and if my poor
abused brain remembers correctly they used either wood or charcoal, with a
burner, in a dish, with a pan over-top.  Probably an evolution of the whole
pot-and-brandreth over a fire thing--just made small and somewhat
portable.
