I've grown to loath the word "redaction", mostly because of it being
used in this manner. In this particular case I think "variation" would
be the best choice of words, with "interpretation" as a distant second
choice.
As for whether it's plagiarism, I'd say no. With recipes, you can get a
lot closer legally than you should ethically - and the differences along
with the fact that the original is cited puts it just on the Ok side of
ethically.
