If the book is on Google Books in its entirety (Full view), you can
download and save the PDF, a previous suggestion. You may also use a
feature of most PDF readers and copy the page as an image. How this is
done varies by the PDF application you use, but is simple to work out
in all that I have played with. Also, you may use the "Plain text"
link in the upper right corner of the view page while viewing the work
in Google Books. It will provide a plain text (truth in advertising!)
version of the script created by Tesseract, OCR software Google uses
for this purpose. It is not 100% accurate, so you will probably want
to compare the scanned original with the plain text page and edit
accordingly. Not surprisingly, it will not include images as part of
its presentation.

If the book is only provided in part (Preview), you will need to
resort to screen shots, OCR, or manual transcription.
