I'm quite paranoid about thawing frozen food-- if it's bigger than a 
poussin and it isn't fish, I start thawing the day before.  And, having 
seen one or two bad experiences had by people who froze 5kg of stew all 
in one lump, I'm *really* careful about the size and shape of the 
packages that go into the freezer.
