No one has mentioned it but the Culinaria volumes have been redone or
are in the process
of being redone. Könemann
released the originals which feature the foods of one country or
region in encyclopedic volumes. Most were translated into English.
Some were released in reduced size paperbacks. (They have been found
in the remainder sections of stores like Borders and B&N for the past
few years.)

The new volumes are by Ullmann and carry the new subtitle
"Cuisine, Country, Culture". The original volumes carried other
subtitles. (Italy was "Pasta - Pesto - Passion.")

For example - Culinaria Italy: Cuisine. Country. Culture.
It's described as:
"Cuisine, Country, Culture—culinary magic in one lavish volume!
One of the most successful series in cookbook history, these new
editions have been completely revised and updated with the guidance of
first-class chefs. The teams behind each Culinaria volume spend months
in the region, allowing them time to fully absorb all of the food and
drink a country can offer. With a clean, modern layout, many new
photos, and revised texts, these heavenly new volumes may just have
you yearning for the next plane to Europe!"
Hardcover: 486 pages
Publisher: Ullmann; 2 edition (October 10, 2010)
The hardcover is priced at $49.95.

Looks like China, Spain, Germany, and France have also been redone and
released already.
