[Sca-cooks] safe freezing of food

Actually I usually do it precooked and frozen then thawed
and heated there, but I think they are also worried about
how you cool and store at home.  I once had a helpful
person ruin over 20 lbs of chicken because she threw it
all in her fridge at once to cool.  i could have killed
her when i oppend those ziplocks!  more chicken was bought
and cooked on site.

So *what* is a better way to freeze/cool a load of 20 lbs of hot, cooked chicken? Putting it under running cold water for awhile and then into the refrigerator or freezer in batches?

As such things have been discussed here, I have saved some of them for a "safe freezing of food" file, but it isn't in the Florilegium yet.
