[Sca-cooks] New 'invention' of medieval food?

It took him ten years to turn ale into vinegar?  Did he use a medieval receipt for the ale?
 
A comment on his website calls him the "Stephen Fry" of the food world.  So he's a comedian?  The mind boggles.
