I've never preserved lemons with sugar - only salt.  Yes, we use it in
tagine and only the rind as Mirhaxa said.  You have to rinse it a couple of
times or it's REALLY salty.  Our favorite is the Moroccan chicken and
olives with preserved lemons.

Ana - Do you have a recipe for preserving in sugar or is it the same as
with salt?
