[Sca-cooks] Looking for a "gluten-free, plant-based (no animal protein or fat) and low/no fat" recipe ideas

I just hosted an office competition for 'special needs' diets.  Prizes were awarded for best by popular vote.  Good competition.  Stretched the edges of some folks' talent windows I think.
 
No doubt the gathering will host a wide variety of raw veggies and fruits ... so don't bother with either of those.  Instead, make something to go along with raw fruits and veggies.
 
Bread:
get a "gluten-free" bread mix, make according to instructions, divide into three and make a braid  bake as any artisan-form bread loaf. serve with "simply Fruit" type preserves.
 
Sweeties: (an adaptation from Roman Candy)
mix a cup of fine-chopped almonds, a cup of fine-chopped pine nuts, a cup of fine chopped figs (dates if you can't get figs) and a cup of oats with enough honey to keep them all stuck together.  form into one inch balls, roll the balls in powedered sugar to keep them from sticking together.
