From the recipe I obtain it is the European Red Tail deer. It comes from Poland/Austria
But, I am not sure if I can get the entrails.

The European red deer (which I believe is what is being referred to as red 
tail deer) is being farmed in the U.S. and Canada and have been imported 
into Australia and New Zealand.  It's not a native species and is considered 
a potential threat to the North Amercan wapiti population.

The blacktailed deer, a type of mule deer, is found in the Pacific 
Northwest.
