Secondly, Mary Taylor Simeti's "Pomp and Sustenance" has a recipe for Trapanese-style fish couscous.

It was interesting reading about Bar Duomo in Cefalu. I spent some time looking at the marzipan in the windows, just as the article's author has. I think I have some pics of it somewhere. Incidentally, the beams of Cefalu's Romanesque-style cathedral have Fatimid-style paintings on them. Drinkers, musicians, and revelers, just like on the muqarna of the Capella Palatina. Another mark of the Arabs who were prevalent in that part of the island.
