My understanding, which may be flawed, is that it is not legal to 
sell lungs in the US because of the possibility of spreading disease. 
Stomachs you may be able to find.

Sadly, half the "butchers" out there are just clerks working at a 
counter that just happens to sell meat, while *real* butchers are 
disappearing from the world of retail foods.
