As an update, I just found what looks like a blog or forum for how to make this 
polish cheese, oscypek.  This is a cheese still made today, that is not made in 
a normal cheese form of round wood, and documentable to 1416.  
 
In this site it shows how to make it, smoke it, and the wooden forms they are 
made in.  Of course I can't read a thing on it, but the pictures give you a very 
good idea.
